Vegetarian Burrito Bowl

This Vegetarian Burrito Bowl is a plant-based low carb bowl recipe that starts with a base of super flavorful Cauliflower Fried Rice and topped plant protein, cheese (use non-dairy if desired), avocados, and more.

I enjoy bowl meals. Two of my favorites is this Coconut Curry Tofu Bowl and this Vegetarian Burrito Bowl recipe! They are both delicious layers of ingredients that can be enjoyed for breakfast, lunch, or dinner and are super easy to make.

🍜 What Is A Bowl Recipe

A bowl recipe is a complete meal in a bowl allowing it to hold a variety of ingredients all in the same place.

There are a variety of bowl recipes that are delicious and easy to make. I consider this Burrito Bowl a Power Bowl Recipe that is low carb, meat-free, and absolutely delicious.

You an also make bowls with a lettuce, rice, quinoa (or other grain) or noodle base. There is usually a high protein topping (such as the beef like plant based protein used in this recipe), and complimentary veggies, fruits or cheeses.

Homemade Taco Seasoning (this is my favorite recipe that I always have on hand)

Beef-less ground beef, I used the Trader Joe's brand of beef-less beef and highly recommend it. However, you can also use this brand for a very similar product.

Tomatoes

Cucumbers

Avocado

Cilantro

Sour cream

Cheese

🔪 Instructions

Step 1:

  1. Place the beef-less beef in a large skillet that has been sprayed with cooking spray. Break the crumbles up and cook and stir for 2 minutes, or until it is warmed thru.
  2. Add the taco seasoning to the beef-less beef and stir to combined. Remove from heat and keep warm.

Step 2:

  1. Reheat the cauliflower rice in the microwave or in a skillet until warm.

Step 3:

  1. Assemble the burrito bowl by placing ¼ of the cauliflower fried rice in a serving bowl. Top with ¼ of the beef-less beef, diced tomatoes, roasted red peppers, avocado slices, and cucumbers.
  2. Garnish the burrito bowl with a tablespoon of sour cream, chopped cilantro, and cheddar cheese.

💭 Top Tips

  • If using a plant based beef such as impossible burger, be sure to cook it for the amount of time listed on the package. I also recommend using extra virgin olive oil to fry the burger.
  • Make the cauliflower rice ahead of time and just reheat it when ready to assemble the burrito bowl.

📖 Variations

  • Substitute tofu or plant based chicken pieces for the beef-like ground beef.
  • Add your favorite variety of toppings. Great ideas are grilled corn kernels, diced bell peppers, green onions, and more.
  • Boost the power of this burrito bowl more by adding black beans to the beef-less beef mixture.
  • Serve a soft fried egg over top of the fully assembled bowl.
  • Make this a vegan recipe and use plant-based shredded cheese and sour cream

Ingredients
  

  • 8 ounces beef-less ground beef
  • cauliflower fried rice
