Vegetarian Burrito Bowl

A vegetarian burrito bowl full of delicious low carb goodness and a healthy dose of protein!

Ingredients
  

  • 8 ounces beef-less ground beef
  • cauliflower fried rice
  • 1 tablespoon taco seasoning
  • 1 cup diced tomatoes
  • 1 cup diced cucumber
  • 1 avocado sliced
  • ½ cup roasted red peppers
  • ½ cup cheddar cheese
  • ½ cup cilantro chopped
  • 4 tablespoon sour cream

Instructions
 

  • Place the beef-less beef in a large skillet that has been sprayed with cooking spray. Break the crumbles up and cook and stir for 2 minutes, or until it is warmed thru.
  • Add the taco seasoning to the beef-less beef and stir to combined. Remove from heat and keep warm.
  • Reheat the cauliflower rice in the microwave or in a skillet until warm.
  • Assemble the burrito bowl by placing ¼ of the cauliflower fried rice in a serving bowl. Top with ¼ of the beef-less beef, diced tomatoes, roasted red peppers, avocado slices, and cucumbers.
  • Garnish the burrito bowl with a tablespoon of sour cream, chopped cilantro, and cheddar cheese.
