I grew up with a mom who ate mostly vegetarian and a dad who didn't. I lived the best of both worlds, and I really loved my mom's vegetarian foods. Her diet had a huge influence on me and I am always looking to make old recipes and create new ones that fit the vegetarian diet.
In my teen years I attended a private church school where the diet was all vegetarian. Those years gave me another level of appreciation for all things vegetarian.
In my married life, I was married to carnivores. My first husband was pretty tolerant of any food I made. This is where I gained a lot of experience cooking in the kitchen. Learning the ins and outs of nutrition, complete proteins, and making sure everything tasted delicious.
My children grew up with the same influences I had with food, and now, as I am sharing a home with my youngest son and his family, we all tend to lean towards enjoying a mostly vegetarian lifestyle.
My passion for vegetarian food is what drew me to writing my 2nd cookbook, The Pescatarian Keto. I loved the challenge of making my favorite vegetarian recipes keto friendly. And, because I am not total vegetarian, adding seafood recipes to help boost the protein in the diet.
