There's nothing quite like the aroma of freshly baked bread wafting through your kitchen, and this homemade Onion Bread recipe will do the job! The loaf is topped with butter-dipped onion rings before baking giving this bread recipe a unique look and flavor that will elevate your sandwich game and add a touch of gourmet to your morning toast.

🥘 Ingredients

Warm water

Active dry yeast

Dried minced onion

Granulated sugar

Olive oil

Salt

Wheat germ

Unbleached flour

Sweet onions: vidalia onions are a perfect onion for this bread.

Butter or margarine (use margarine for a vegan bread recipe)

Water, sugar, and yeast in a small bowl.

🔪 How to Make Onion Bread

  1. Sprinkle yeast and 1 teaspoon sugar over water in a large bowl. Stir to dissolve. Set aside for 5 minutes. 
  2. In a large mixing bowl, add the yeast mixture, remaining warm water, sugar, dried minced onion,oil, salt, wheat germ, and 1½ cups of flour.
  3. Using a hand mixer, mix on medium speed for 2 minutes. You will have a loose batter at this point.
  4. Using a wooden spoon, stir in the remaining flour. Cover bowl with plastic wrap and let dough rise in a warm place for 1 hour, until doubled in size.
  5. After the dough has doubled in size, mix with a spoon for 30 seconds. 
  6. Spread bread dough into a loaf pan that has been coated with non-stick cooking spray. Pat top of batter into shape with lightly floured hands.
  7. Cover loaf with a towel and let rise until batter is about ½ inch from top of the pan.
  8. Preheat oven to 375 degrees F.
  9. Melt butter or margarine in a small microwave safe bowl in the microwave for 30 seconds. Place onion rings in the melted butter and toss to coat each ring.
  10. Arrange onion rings on top of the dough, brushing the top with any remaining butter. 
  11. Bake bread for 35 minutes or until golden brown.

Risen dough will be batter like, once you attain the first rise (first image), mix with a wooden spoon or large spatula for 30 seconds (second image).

🥫Storage

Room temperature: while refrigeration or freezing is the most recommended for storage, you can store bread in an airtight bag on in a dark spot (like a bread box) up to 3 days.

Refrigerate: store completely cooled loaf of bread in an airtight bag up to 1 week.

Freeze: store in an airtight freezer safe bag up to 3  months.

Poppy Seed Onion Bread: Sprinkle the top of the onion bread with a tablespoon of poppy seeds before baking.

Cheese and Herb-infused Onion Bread: Incorporate dried herbs like rosemary, thyme, or oregano to give your bread a delightful herbal twist and stir 1 cup shredded cheddar cheese into the bread dough.

Whole Wheat Onion Bread: Swap a portion of the unbleached flour with white whole wheat flour for a heartier and nuttier bread.

Caramelized Onion Bread: top the bread with caramelized onions instead of raw onion rings.

Can I substitute bread flour or all purpose flour for the unbleached flour?

Yes, you may, however the loaf will be softer and may crumble easier so it is recommended to use unbleached flour or whole wheat flour for this recipe.
